SUBJECT: BLACK BEAN CHILI
Just wanted to add my 2 cents worth for the wonderful little
black bean! This chili is delicious!
2 1/4 c dried black beans
water
1 c tomato sauce
6 tbsp tomato paste
2 tbsp lime juice
2 tbsp red wine vinegar
1 c onions, chopped
1 c celery, chopped
1 c green bell pepper, chopped
1 c tomatoes, chopped
1 med jalpeno pepper, seeded and chopped
4 cloves garlic, finely chopped
1 tbsp cilantro, fresh, finely chopped
1 1/2 tsp ground coriander, ground cumin and chili pwd.ea
salt, pepper and sour cream
Wash beans and place them in a large bowl and cover with
water. Soak overnight. (Beans will double in size during
soaking process).
Drain beans and place in a large soup pot. Add approx. 7
1/2 cups water. Bring beans to a boil and boil for 2 hours
or until beans are almost cooked. Stir in tomato sauce,
paste, lime juice, red wine vinegar, vegies and seasonings.
Continue cooking until beans are soft, 45 min - 1 hour.
Top each serving with sour cream if desired.
Note: When preparing fresh chilies, wear rubber gloves for
protection against oils that later cause burning sensation
on skin.
Makes 4-6 servings.

SUBJECT: BLACK BEAN LASAGNA
OK. I know it sounds bad but trust me it is a vegetarian's
delight (good for meat eaters as well). Plus it really isn't
lasagna but a tasty look-a-like. The recipe is as follows:
Ingredients required:
3 cups of black beans
2 cups of diced red onions
2 cups diced mushrooms
3 cups diced zucchini
1 cup diced red or green pepper
1 cup of corn
6 - 10 or 12 inch flour tortillas
2 1/2 teaspoons of ground cumin
1 1/2 teaspoons of ground cayenne red pepper
16 ounces of monterrey jack cheese
Cook the beans (I prefer soaking overnight) and process into
a paste (mechanically or with a potato masher).
Saute' the vegetables (except the corn) and after they are
done, mix in the cumin and cayenne pepper.
Spray a deep casserole dish with Pam and get ready to layer
in the ingredients.
Spread a tortilla with the bean paste and set it in the
casserole dish. On top of the paste, layer the sauteed
vegetables, sprinkle some corn and then some grated cheese.
Repeat this process as deep as your dish is, preferably 5-6
layers. Sprinkle plenty of cheese on the top and bake at
350 degrees for 45 minutes and you will have the best black
bean dish you have ever tasted. Trust me.

SUBJECT: BLACK BEAN LASAGNA
James - Sounds great. we love blk beans. Heres our weekly:
Black Beans and Yellow Rice.
2 cans Blk Beans 1 Tbl dried minced onion
1 lrg chopped yellow onion 1 glove garlic smashed
Tsp cumin tsp chix bullion ( 1/2 Tsp salt
chili pwdr 1/4 cup Salsa
Saute onions and dry ingredience till soft in 1 Tbl olive
oil @ 15 min. Stir occasionally. Add beans, stir cook 10
minutes. Mash and stir. Cook 15 minutes until moisture is
gone. Taste, Adjust seasons - add water if needed, tbl at a
time.
Serve over cooked Rice ( we like yellow best but brown is
good.
Serve with Salsa, avacado, etc

I'm not shure if you want the beans over white rice or the
beans mixed in the rice. So here are both recipes.

Title: Spanish Beans (Habichuelas Guisadas)
Categories: Main dish, Beans
Servings: 4
2 c Water
1 Small potato, diced
1 Chicken broth cube
1 pn Salt
1 1/2 ts Garlic powder
1 pn Black pepper
2 T Sofrito
1 pk Sazon
3 T Tomato sauce
1 cn Pinto beans
Place all ingredients in medium saucepan and boil
until the potatoes are tender and cooked, about 20
minutes. Serve over white rice.
